Ingredients to make Aloo Mathri
1 cup flour
2 tbsp semolina
2 tsp sesame seeds
1 tsp chilli flakes
1/2 tsp ajwain
salt as required
1 large boiled potato
2 cups vegetable oil
How to make Potato Mathri
Prepare the dough
Add maida, semolina, sesame, chilli flakes, carom seeds and salt in a bowl. Add 2 tbsp hot oil as well. Now mash a boiled potato and put it in this mixture. Add water and knead to make a soft dough.
Make small papers
Now make small balls from this dough and flatten them with the help of a rolling pin. Use a fork to make holes evenly in the papdi.
fry and serve
Now heat oil in a pan and put the rolled papdi in the hot oil. Now deep fry it till it becomes crispy and golden brown from the side. Fry on absorbent paper, take out and serve.
