Boondi Ladoo is a popular Indian sweet made from small, fried droplets of gram flour batter that are then soaked in sugar syrup and formed into small balls. Here's a recipe for making Boondi Ladoo at home:

Ingredients:

For boondi:

  • 1 cup gram flour (besan)
  • 1/2 cup water
  • A pinch of baking soda
  • Oil, for frying

For sugar syrup:

  • 1 cup sugar
  • 1/2 cup water
  • A few saffron strands
  • 1/2 tsp cardamom powder

For assembling:

  • 1/4 cup chopped nuts (cashews, almonds, pistachios)
  • 2 tbsp raisins
  • 1 tsp ghee

Instructions:

  1. In a mixing bowl, add gram flour, water, and a pinch of baking soda. Mix well to make a smooth batter. The batter should be of pouring consistency, neither too thick nor too thin.

  2. Heat oil in a deep frying pan.

  3. Hold a perforated ladle over the hot oil and pour a small amount of batter over the ladle.

  4. Tap the ladle gently so that small droplets of batter fall into the oil.

  5. Fry the boondis until they are golden brown and crispy.

  6. Remove the fried boondis with a slotted spoon and drain the excess oil on a paper towel.

  7. Repeat the process with the remaining batter.

  8. To make the sugar syrup, heat sugar and water in a pan. Bring it to a boil and let it cook for 5-7 minutes or until the syrup reaches one-string consistency.

  9. Add saffron strands and cardamom powder to the syrup. Mix well.

  10. Add the fried boondis to the sugar syrup and mix gently.

  11. Let the boondis soak in the syrup for 10-15 minutes.

  12. Heat ghee in a pan. Add chopped nuts and raisins. Roast them for a few seconds.

  13. Add the roasted nuts and raisins to the boondi mixture. Mix well.

  14. Allow the mixture to cool slightly.

  15. Apply some ghee on your palms and shape the mixture into small balls.

  16. Let the boondi ladoos cool completely before storing them in an airtight container.

Note: The sugar syrup should be warm when you add the boondis to it. If the syrup is too hot, the boondis may break or become too soft. You can adjust the sweetness of the sugar syrup according to your taste.
