Paneer is a soft and creamy Indian cheese made by curdling milk. It is a versatile ingredient that can be used in many Indian dishes, such as paneer tikka, matar paneer, palak paneer, and more. Here's an easy way to make paneer at home:
Ingredients:
- Full-fat milk - 1 liter
- Lemon juice or vinegar - 2-3 tablespoons
- Muslin cloth or cheesecloth
Instructions:
- Pour the milk into a heavy-bottomed pan and place it over medium heat.
- Stir the milk occasionally to prevent it from sticking to the bottom of the pan.
- Once the milk comes to a boil, reduce the heat to low and add lemon juice or vinegar to it.
- Keep stirring the milk until it curdles and the whey separates from the curd. This may take 2-3 minutes.
- Turn off the heat and let the milk sit for a minute to allow the curd to settle at the bottom.
- Place a muslin cloth or cheesecloth over a strainer and pour the curdled milk through it.
- Rinse the paneer under cold water to remove any traces of lemon juice or vinegar.
- Gather the edges of the cloth and squeeze out the excess water from the paneer.
- Place a heavy object on top of the paneer to press it and remove any remaining water.
- Keep the paneer under the weight for 30 minutes to an hour.
- Once the paneer has set, remove it from the cloth and cut it into cubes or slices.
- Your homemade paneer is now ready to be used in any dish of your choice.
Note: You can use the leftover whey from the paneer-making process to knead dough for rotis or use it in soups and stews.
