Rabdi kulfi is a delicious frozen dessert that is popular in India. Here's a recipe to make it at home:
Ingredients:
- 1 litre of full-fat milk
- 1/2 cup sugar
- 1/2 tsp cardamom powder
- 1/4 cup pistachios, chopped
- 1/4 cup almonds, chopped
- 1/4 cup condensed milk
- 4-5 kulfi moulds or popsicle moulds
Instructions:

In a large heavy-bottomed pot, heat the milk over medium heat. Stir it occasionally to prevent it from sticking to the bottom.

Once the milk starts to boil, reduce the heat to low and let it simmer for 1 hour, stirring every 10-15 minutes. This will thicken the milk and create a rabdi.

Add sugar, cardamom powder, chopped nuts, and condensed milk to the pot. Mix well until the sugar dissolves.

Cook for another 5-7 minutes, stirring occasionally, until the mixture becomes thick and creamy.

Turn off the heat and let the mixture cool to room temperature.

Pour the mixture into kulfi molds or popsicle molds, filling them about 3/4 full.

Cover each mold with aluminum foil or plastic wrap and insert a popsicle stick into the center of each mold.

Freeze the kulfi molds for at least 6-8 hours or overnight.

To serve, remove the kulfi molds from the freezer and let them sit at room temperature for 5-10 minutes.

Gently pull the kulfi out of the molds using the sticks, and serve immediately.
