1 pinch saffron

⅓ cup ghee

1 cup almond flour

1 cup milk

½ cup granulated white sugar for less sweet halwa use 75 g

¼ tsp cardamom powder (elaichi)

2 tbsp almonds or pistachios, chopped to decorate

Method

Heat 1 tbsp milk in a small pan on medium heat. You can also microwave the milk for 30 seconds.

When the milk becomes hot, add ground saffron to it. Take the pan off the heat and keep it aside for 10 minutes till it develops flavor and color.

stovetop method

Heat ghee in a heavy bottom vessel on medium heat.

- Slow down the flame. Add almond flour and fry till the raw smell of almond flour goes away and the color of almond flour starts turning golden. Keep stirring continuously to avoid burning. In total it will take about 10 minutes.

Now add milk and stir continuously so that there are no lumps. Cook for another 5-6 minutes until the almond flour absorbs all the milk.

Add sugar, saffron milk, and cardamom powder and mix well. Once the halwa becomes loose, fry it again to thicken it.

Cook for about 6-7 minutes till the halwa thickens and the ghee leaves the sides of the pan.

- Almond flour pudding becomes thick when it cools down. Once you have the right consistency, take it out in a serving bowl.

Garnish the almond pudding with chopped pistachios or almonds and serve hot.
