Everyone likes Boondi Raita very much. Today we are going to tell you about its recipe and if you follow this recipe then the taste of Raita will increase.

Ingredients

1 cup grated spinach

3/4 cup boondi

2 cups whisked curd (chilled)

1 tsp oil

1/4 tsp mustard seeds

1/4 tsp asafoetida

1/4 tsp green chili paste

1/4 tsp ginger Paste

1/2 tsp black salt or as per taste

1/2 tsp roasted cumin powder

Salt as per taste

Method

* Heat oil in a pan. Add mustard seeds and let them crackle. Add asafoetida, green chili, and ginger paste.

* Fry for a few seconds and add chopped spinach. Fry for about 30 seconds or till it turns slightly charred.

* Do not overcook spinach as it will lose its beautiful green color and nutrients. Keep it aside and let it cool down to room temperature.

* After it cools down, grind it in an electric grinder to make a smooth paste.

* Mix whipped curd, spinach puree, black salt, and cumin powder in a bowl. Add 2 tbsp water and mix well. Refrigerate until ready to serve.

* Just before serving, add the boondi and mix well. Adding boondi just before serving makes it crunchy.
