Rasmalai is liked by many Indians but people buy it from outside and eat it. You can also make it at home. Today we are going to tell you about its recipe.

Ingredients:

For Rasgulla:

1 liter of full-fat milk

2 tbsp lemon juice or vinegar

1 cup sugar

4 cups water

For the Milk Syrup:

1 liter of full-fat milk

1 cup sugar

A pinch of saffron threads

1/2 teaspoon cardamom powder

Chopped nuts (like pistachios and almonds) for garnishing.

Instruction:

How to make Rasgulla

Boil milk in a big vessel. Once it boils, add lemon juice or vinegar and stir slowly till the milk curdles and the whey separates.

Strain the curdled milk through a muslin cloth or cheesecloth to collect the paneer. Wash the paneer in cold water to remove the lemon juice or vinegar taste.

Squeeze out the excess water from the paneer and knead it gently till it becomes smooth and pliable.

Divide the paneer into small balls of equal size and flatten them by pressing them lightly between your palms.

Make syrup by mixing sugar and water in another large vessel. Boil it.

Slowly drop the paneer balls into the boiling sugar syrup. Cover the vessel with a lid and cook on medium heat for about 15 minutes. Paneer balls will double in size.

Switch off the flame and let the rasgullas cool in the syrup. When it cools down, take out the rasgullas from the syrup and keep them aside.

Milk syrup:

Boil the milk in a separate large vessel.

Lower the flame and let the milk boil, while stirring occasionally, till it reduces to almost half. This process may take about 30-40 minutes.

Add sugar, saffron-soaked milk, and cardamom powder to the milk. Mix well and continue cooking on low flame for the next 5-10 minutes.

Assemble Rasmalai like this

Press the cooled paneer balls gently between your palms to remove excess sugar syrup.

Dip the rasgullas in the prepared saffron-flavored milk syrup. Let them soak in milk for at least 2-3 hours, so that they can absorb the flavor.

Garnish with chopped nuts like pistachios and almonds.

Serve chilled rasmalai as a delicious and scrumptious dessert and enjoy.
