Every year millions of people become victims of food poisoning, and the main reason behind this is salmonella bacteria. Found in raw eggs, undercooked meat, vegetables, and processed food, this bacteria can cause serious infections in the intestine. A recent research published in the National Academy of Sciences has revealed that salmonella bacteria keep themselves alive and spread infection by changing the balance of nutrients in the intestine.

The researchers found that salmonella first enters the small intestine and causes inflammation in the lining of the intestine. This hinders the normal absorption of amino acids from food. As a result, these amino acids such as lysine and ornithine get stored in the large intestine. It helps protect bacteria from the harmful effects of short-chain fatty acids (SCFAs), causing this bacteria to grow faster.

According to the World Health Organization (WHO), around 600 million people get sick every year due to unsafe food, and out of these, 4.2 lakh people lose their lives. Salmonella is the major factor in this problem.

Researchers found during the study on mice that salmonella infection reduces the absorption of amino acids in the blood. "This discovery not only helps to understand the Salmonella infection, but opens up new treatments for inflammatory bowel disorders, such as colon disease and ulcerative colitis," said Andreas Baumler, Professor at the University of California-Davis.

To avoid food poisoning, always cook food properly and keep food items clean. Avoid the use of raw food and choose a healthy diet. This will help protect your gut and prevent infection.
