Shahi Paneer Recipe: During Navratri, if you also want to eat something tasty but are avoiding onion and garlic, then you can make and eat Shahi Paneer curry without onion and garlic for lunch or dinner. As tasty as this vegetable looks, it is equally easy to make. Let's know the easy recipe for making Shahi Paneer curry.

Ingredients for Shahi Paneer Curry
Paneer diced – 2 cups
Tomato - 3-4
Ginger-green chili paste – 1 tsp
Turmeric - 1/2 tsp
Red chili powder - 1 tsp
Cumin - 1 tsp
Garam masala - 1/2 tsp
Kashmir red chili - 1 tsp
Small cardamom - 2-3
Thick cardamom - 1
Bay leaf - 1
Melon seeds - 1 tbsp
Kasuri fenugreek - 1 tsp
Asafoetida - 1 pinch
Cashew - 1 tbsp
Oil – 2-3 tbsp
salt - as per taste

Shahi Paneer Vegetable Recipe
To make Shahi Paneer curry, first cut 1-2 inch square pieces of paneer. Now soak melon seeds and cashews in hot water for half an hour. After the fixed time, take out cashew nuts and melon seeds from the water and grind them in a mixer to make a smooth paste. Now take out the paste in a bowl and keep it aside. After this, wash and chop the tomatoes and prepare their puree by putting them in the mixer. Take out the puree in a bowl.

Now put oil in a pan and heat it on medium flame. After the oil is hot, add bay leaves and thick cardamom and fry it. After a few seconds add green cardamom and fry for 30 seconds. After this, put cumin seeds in the pan and fry lightly. After the cumin seeds crackle, add Kashmiri red chili and stir with a spoon, then add tomato puree. Now let the tomato puree cook for 6-7 minutes. Cook it till the oil starts separating.

When oil starts separating from the tomato puree, add ginger-green chili paste to it. After cooking for 1 minute, add cashew-melon seed paste to the puree and mix. Now let the puree cook for another 5 minutes. After this add turmeric, red chili powder, kasoori fenugreek, and a pinch of asafoetida and mix. Now cook the gravy for 5 more minutes. After this gravy will start leaving oil.

Now put chopped paneer pieces and garam masala in the gravy. Add half a cup of lukewarm water to it and mix it well, cover the vegetable, and cook for 5-7 minutes, then turn off the gas. Tasty Shahi Paneer curry without onion and garlic is ready. It can be eaten for lunch or dinner anytime.
