Material

Milk - 3 liters
Sugar - 4 cups
Flour - 3 tbsp
Lemon juice - 3 tbsp
Saffron - 3 pinches
Cardamom - 5-6
Pistachios - 1 cup
Water - 2-3 tbsp

Method
1. First put the milk in a vessel, then heat it on the gas.
2. When the milk starts boiling, turn off the gas.
3. Allow the milk to cool then add 2 tbsp milk to a bowl.
4. Mix 2-3 spoons of water in 2 spoons of milk.
5. Mix water in milk and pour it into hot milk.
6. Milk will curdle after 15 minutes when the curd of milk will separate from the water.
7. Take out the Chhaina from the water. Then mash the gram with both hands and mash it well and take it out in a bowl.
8. Then add chickpeas to the flour and mix both and prepare rasgulla balls from this mixture.
9. Take a big vessel and put 7-8 cups of water in it and keep it on medium flame to heat.
10. When the water becomes hot, add sugar to it and boil it.
11. When the sugar syrup starts boiling, add cardamom powder and saffron.
12. Allow the sugar syrup to boil well and add the gram balls.

13. Cover the vessel and let it boil for 10-12 minutes.
14. The size of Rasgulla will double. Cook the rasgulla for 10 minutes and turn off the gas.
15. Your delicious and juicy Bengali Rasgulla is ready. Serve garnished with pistachios.
