Method of making Baba Ganoush

- First of all, roast the bharta wala round brinjal on a gas flame, barbeque, charcoal, or stove, so that its outer skin gets burnt and becomes soft.

Now cover it in a vessel and keep it aside for 10 minutes.

Now put some oil in a pan. Then add half a teaspoon of ground coriander, ground chili, roasted cumin, and a pinch of turmeric to it.

Now put some boiled chickpeas in this oil.

Lastly, add salt as per taste.

Fried chickpeas are optional, it is up to you to use it or not.

Now take out the skin of the brinjal and chop it well.

Meanwhile, add finely chopped garlic to the brinjal and chop it again.

Now add two tablespoons of tahini paste (white sesame paste) to the brinjal.

Then put two tablespoons of dried curd (hung curd) in it.

Now add the juice of half a lemon and salt as per taste.

If you want, add green chilies to make it a little spicy, and then mix it well.

Your baba ganosh is just ready.

Put Baba Ganoush on a plain plate and serve it with a little olive oil, a little red chili powder, spicy chickpeas, green coriander, and finely chopped red capsicum, and enjoy the great taste.
