We remain confused about whether fresh or stale rice is beneficial or not. But stale rice is healthier than fresh rice.

According to nutritionist Pooja Makhaja, parboiled rice has a lower glycemic index than freshly cooked rice, which helps with blood sugar and weight.

Freshly cooked rice contains digestible starch, and studies have shown that digestible starch is easier for the body to digest and break down, increasing blood sugar levels.

On the other hand, the process of cooling the cooked starch is called starch retrogradation and it converts digestible starch into resistant. Resistant starch is difficult for the body to break down, and since it is a probiotic, it does not cause any harm to the body.

To avoid damage from stale rice, it should be stored properly. Otherwise, the rice may get contaminated with microorganisms like mold and bacteria.

Hence, leftover rice should be packed in an air-tight container and kept in the refrigerator, and served at the same temperature without reheating for re-eating.
