Chana Masala, also known as Chole Masala. It is made with chickpeas, which are cooked in a spicy and tangy tomato-based gravy with a mix of aromatic spices. The method of making Chana Masala is as follows:

Ingredients:

2 cups chickpeas (boiled overnight)

2 onions (finely chopped)

2 tomatoes (finely chopped)

1 tbsp ginger-garlic paste

2 green chilies (finely chopped)

1 tsp cumin seeds

1 tsp coriander powder

1 /2 tsp turmeric powder

1/2 tsp red chili powder

1/2 tsp garam masala

1 tbsp dried fenugreek leaves (kasoori methi)

salt to taste

2 tbsp oil

Coriander leaves for garnishing

Instruction:

Heat oil in a pan and add cumin seeds. Let them explode

Add onions and green chilies and fry till onions turn translucent.

Add ginger-garlic paste and fry for a minute.

Add tomatoes and cook till soft.

Add coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for a minute.

Add boiled chickpeas and mix well.

Add water as required to get the desired consistency.

Add garam masala and kasoori methi. Mix well and let it boil for 5-10 minutes.

Garnish with coriander leaves and serve hot with rice or roti.
