Ingredients for Jimikand vegetable:
500 grams Jimikand (elephant yam)
1/2 cup curd
1/2 teaspoon asafoetida
1 tablespoon turmeric powder
1 tablespoon coriander powder
1 tablespoon red chili powder
1 tablespoon garam masala
1 lemon
2 tomatoes
1/4 teaspoon mustard seeds
1/2 Tablespoon cumin
1 small piece ginger
3-4 green chillies
3 tbsp fresh coriander
Salt as per taste
Cooking oil as required

Method to make Jimikand vegetable:
First of all, peel the thick peel of Jimikand and cut it into small pieces. Wash these pieces thoroughly to remove any dirt or impurities.
Place the Jimikand pieces in a pressure cooker with salt, turmeric, and water. Cook till two whistles. Let it cool.
When Jimikand cools down, make a paste of tomato, green chili, ginger, and curd. Mix these ingredients into a smooth mixture.
Heat oil in a pan and add asafoetida, mustard seeds, and cumin seeds. Let them crackle.
Add the tomato-curd paste to the pan and cook until oil separates.
Add coriander powder, red chili powder, and garam masala. Mix well.
Once the jimikand cools down, add it to the pan and cook for a few minutes, allowing the flavors to blend.
Squeeze the juice of one lemon into the dish, which will add a zesty freshness.
Garnish with fresh coriander leaves.
Jimikand vegetable is ready to serve. It goes well with roti, paratha, or rice.
