Recipe- Make carrot barfi instead of carrot halwa in winter, it tastes amazing!

Winter season is going on and carrots are in the headlines. Carrots are rich in nutrients and can be enjoyed in both sweet and salty forms. Carrot Halwa is a popular sweet and today we will introduce you to Carrot Barfi. If you haven't tried it yet, now is the right time to try our recipe. Let us know how you can make it.

Material :

Carrots – 1/2 kg

Khoya (Mawa) – 1 cup

Cashew powder – 1/2 cup

Full cream milk – 1 cup

Cashews – 8-10

Pistachios – 8-10

Cardamom – 4-5

Desi ghee – 2 tbsp

Sugar – 1 cup

Instruction:

First of all, wash the carrots thoroughly and pat them dry. Grate the carrots or chop them finely and keep aside.

In a deep-bottomed pan, heat milk on medium flame.

When the milk starts boiling, add grated carrots to it and mix with the help of a spatula. Cook for 3-4 minutes.

Finely chop cashews and pistachios and peel and crush the cardamom.

Now put mawa in a vessel and mash it well.

When the carrot absorbs the milk and is cooked well, add 2 tablespoons of desi ghee to it and mix.

Keep stirring the mixture continuously for 3-4 minutes. When the ghee is absorbed well and the carrots are roasted well, add sugar to it.

Keep stirring until the sugar dissolves completely. Continue cooking until the moisture in the carrots evaporates.

Add crumbled khoya to the roasted carrot mixture and mix well. Fry for a few more minutes.

When the mixture dries, add cashew powder, chopped cashews and cardamom powder. Mix well.

Grease a plate or tray with ghee and spread the prepared mixture well on it.

Let it set for some time.

When it cools down, cut it into desired shapes.
