Chana Tikki, also known as Chole Tikki or Chole Cutlet, is a popular Indian dish made of mashed chickpeas and spices. It is crispy on the outside and soft on the inside. Here's How To Make Chana Tikki:

Ingredients:

  • 1 cup chickpeas, soaked overnight and boiled till soft
  • 1 small onion, finely chopped
  • 2 green chilies, finely chopped
  • 1/4 cup chopped coriander leaves
  • 1/2 tsp ginger-garlic paste
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1/4 tsp turmeric powder
  • 1/4 tsp red chili powder
  • 1/2 tsp garam masala
  • salt to taste
  • 1 tbsp lemon juice
  • oil for shallow frying

Instruction:

  • Put the boiled chana in a large bowl and mash them well using a potato masher or the back of a spoon. Its consistency should be coarse and some whole grams should be left.
  • Add chopped onions, green chilies, chopped coriander leaves, ginger-garlic paste, cumin powder, coriander powder, turmeric powder, red chili powder, garam masala, salt, and lemon juice to the mashed gram. Mix all the ingredients well.
  • Divide the mixture into equal-sized portions and shape them into round or oval patties.
  • Heat the oil in a non-stick pan on medium heat.
  • When the oil is hot, carefully put the tikkis in the pan and fry till they turn golden brown and crisp from both sides. Flip them gently to avoid breaking them.
  • Once the tikkis are cooked and crisp, remove them from the pan and place them on a plate covered with absorbent paper to remove excess oil.
  • Serve chana tikki hot with green chutney, tamarind chutney, or ketchup.
