Here is a recipe for Tandoori Veg Biryani:

Ingredients:

  • 2 cups basmati rice
  • 3-4 cups water
  • 1 cup yoghurt
  • 2 tablespoons tandoori masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder
  • 2 tablespoons ginger garlic paste
  • 2 cups mixed vegetables (carrots, peas, potatoes, beans)
  • 1 onion, thinly sliced
  • 2 tablespoons ghee or oil
  • Salt to taste
  • A handful of fresh mint leaves
  • A handful of fresh cilantro leaves

Instructions:

  1. Rinse the basmati rice in water until the water runs clear. Soak the rice in water for 30 minutes.

  2. In a mixing bowl, add yoghurt, tandoori masala, turmeric powder, red chilli powder, and ginger garlic paste. Mix well to make the tandoori marinade.

  3. Add the mixed vegetables to the marinade and mix well to coat the vegetables.

  4. Heat a pan with ghee or oil over medium heat. Add sliced onions and sauté until golden brown.

  5. Add the marinated vegetables to the pan and stir-fry for 5-6 minutes until the vegetables are partially cooked.

  6. Add the soaked and drained rice to the pan and sauté for 2-3 minutes until the rice is coated with the vegetable and tandoori marinade.

  7. Add 3-4 cups of water to the pan and stir gently. Add salt to taste and bring the mixture to a boil.

  8. Reduce the heat to low and cover the pan with a tight-fitting lid. Cook for 15-20 minutes or until the rice is fully cooked and the water is absorbed.

  9. Turn off the heat and let the biryani sit for 5-10 minutes. Garnish with fresh mint and cilantro leaves.

  10. Serve hot with raita or salad.
