Gud Til Papdi Recipe: Make thin, roti-like and crispy papad-style chikki with sesame & jaggery (chef’s method)

Winter and jaggery go hand in hand. From til ladoo to rewadi, sesame–jaggery sweets warm the body and satisfy sweet cravings. Gud til papdi is a thin, crisp version of til chikki—so light that it snaps like papad and melts in the mouth. With the right jaggery stage and quick rolling, you can make it perfectly at home.

Why til–gud is great in winter
Sesame seeds are rich in protein, fibre, iron, calcium, and healthy fats. Jaggery provides iron and minerals and is warming in nature. Together, they support energy, digestion, and immunity during cold months.

Ingredients

  • 1/4 cup white sesame seeds (til)

  • 1/4 cup jaggery (crushed or powdered, equal to sesame)

  • 1 tsp desi ghee

  • Finely chopped pistachios (optional, for garnish)

Chef’s step-by-step recipe

  1. Roast the sesame
    Dry roast sesame seeds in a heavy-bottom pan on low flame. Stir continuously until they turn light golden and aromatic. Transfer immediately to a plate to stop further cooking.

  2. Melt the jaggery
    Heat ghee in the same pan. Add jaggery and cook on low–medium flame until it melts completely and starts bubbling.

  3. Check jaggery consistency (most important step)
    Drop a little melted jaggery into a bowl of water. If it hardens instantly and snaps like candy, it’s ready. If it dissolves, cook a little more.

  4. Mix sesame quickly
    Add roasted sesame seeds to the jaggery. Mix fast so everything coats evenly.

  5. Roll thin like a roti
    Grease a silicone mat or parchment paper with ghee. Spread the hot mixture. Sprinkle pistachios on top. Cover with another greased paper and immediately roll with a rolling pin as thin as possible (roti or papad thin).

  6. Cool and break
    Remove the top paper and let it cool slightly. Once set, break into pieces. Crisp gud til papdi is ready.
