Traditionally prepared using tamarind, tomatoes, black pepper, cumin, and other spices, rasam resembles a thin, soup-like broth that pairs perfectly with rice or can even be enjoyed on its own. 1/4 cup arhar dal (toor dal)

1 tbsp coriander seeds

1 tbsp urad dal

2 tsp black pepper powder

8–10 dried red chilies

10–12 curry leaves (you may add more)

8–10 garlic cloves

1/4 cup dried tamarind (market-available pulp)

1/2 tsp turmeric powder

1/2 tsp asafoetida (hing)

1 tbsp oil

1 tbsp salt (optional; can be added later while cooking)
How to Prepare Rasam Powder

Heat a pan on low flame and dry-roast the arhar dal and urad dal for 2–3 minutes, stirring continuously to remove rawness.

Add coriander seeds, cumin seeds, black pepper, and curry leaves. Roast gently until the spices lose their moisture and turn aromatic.

Once the mixture is about 80% roasted, add dried red chilies and roast until they turn crisp.

Switch off the flame and allow the mixture to cool completely.

Finely chop the garlic. Heat oil in a pan and sauté the garlic on low flame until golden brown. Set it aside—it will turn crunchy as it cools.

Transfer the roasted lentil-spice mixture into a mixer jar. Add tamarind pulp, fried garlic, turmeric, salt, and asafoetida.

Grind everything into a fine powder.
