As winter sets in, the body naturally craves foods that are not only filling but also provide warmth from within. In this season, hot and nourishing meals feel more comforting than anything else. If you are looking for a winter dish that is both healthy and delicious, this traditional Nepali recipe is worth trying.
We are talking about Thukpa, a popular noodle soup from Nepal that is now gaining popularity in many parts of India. Made with vegetables, noodles and a hot, flavorful broth, thukpa provides instant warmth and energy during cold days.
Nepali Thukpa: A perfect winter comfort food
Thukpa is light on the stomach yet very satisfying. It is easy to prepare, requires basic ingredients and can be made quickly, making it ideal for winter evenings or late-night hunger.
Below is a simple vegetarian thukpa recipe you can make at home.
Ingredients

Noodles – 1 packet

Beans – ¼ cup (chopped)

Cabbage – ½ cup (chopped)

Onion – ½ cup (chopped)

Spring onion – ½ cup

Carrot – ¼ cup (chopped)

Vegetable broth or water – 4 cups

Oil – 2 teaspoons

Sweet chilli sauce – ½ tablespoon
-
Soy sauce – 2 teaspoons
-
Garam masala – as per taste
-
Salt – as per taste
-
Black pepper – as per taste
-
Garlic – 4 cloves (chopped)
-
Ginger – optional (finely chopped)
How to make Veg Thukpa
First, wash all the vegetables properly and cut them into thin strips. Boil water in a pan, add a little salt and oil, then cook the noodles until soft. Drain the noodles and keep them aside.
Heat oil in a deep pan or wok. Add chopped garlic (and ginger, if using) and sauté lightly until aromatic. Add all the vegetables and stir-fry on high heat for 2–3 minutes. The vegetables should remain slightly crunchy.
Now add salt, black pepper, soy sauce and sweet chilli sauce. Mix well. Pour in the vegetable stock or hot water and let it simmer for 5–7 minutes so the flavors blend into the broth.
Add the boiled noodles to the soup and mix gently. Cook for another 2–3 minutes. Taste and adjust seasoning if needed. Garnish with spring onions and serve hot.
