Kaju Katli is one of India’s most loved sweets, known for its smooth texture and subtle sweetness. Ingredients Required

  • 500 grams peanuts
  • 350–400 grams sugar (adjust to taste)
  • About 200 ml water (roughly half the quantity of sugar)
  • A few strands of saffron
  • 500 grams khoya (mawa)
  • Cardamom powder (as required)
  • 2 teaspoons ghee

Method

Start by roasting the peanuts on a low flame. Stir continuously to ensure they cook evenly without burning. Once roasted, allow them to cool and remove the skins by rubbing them between your hands or using a clean cloth.

Next, grind the peanuts into a fine powder using a mixer. For a texture similar to Kaju Katli, ensure the powder is smooth and not coarse.

In a pan, add sugar and water and cook until the sugar dissolves completely and forms a sticky syrup. Add saffron strands to enhance both aroma and flavor. When the syrup reaches a one-string consistency, mix in cardamom powder and crumbled khoya. Stir continuously until the khoya melts, then add ghee.

Now add the peanut powder to the mixture. Mix well and cook for 3–4 minutes until it thickens.

Grease a plate with ghee and spread the mixture evenly over it. Let it set for 5–6 hours at room temperature. Once set, garnish with chopped almonds or cashews and cut into barfi or diamond-shaped pieces.
