200 grams fresh homemade chhena (paneer)

4 tablespoons powdered sugar

2 ripe mangoes (preferably Alphonso), thinly sliced

How to Prepare Fresh Chhena

Boil 1 liter of full-cream milk.

Add a souring agent such as lemon juice or vinegar to curdle the milk.

Strain the curdled milk through a muslin cloth.

Rinse lightly and squeeze out excess water.

Your fresh chhena is now ready to use.
Method
Step 1: Prepare the Sandesh Mixture
Place the fresh chhena on a large plate and knead it using the heel of your palm until it becomes smooth, soft, and creamy.
Add powdered sugar and cardamom powder. Continue kneading until the ingredients are fully incorporated and a soft dough-like mixture forms.
Step 2: Create the Sandwich Layers
Divide the Sandesh mixture into two equal portions.

Place the first portion on a sheet of cling wrap.

Flatten it into a neat rectangular layer.

Arrange thin mango slices evenly across the surface.
Now flatten the second portion of the Sandesh mixture and carefully place it over the mango layer.
Gently press the edges to seal and create a sandwich-like structure.
Step 3: Chill and Set
Wrap the prepared Sandesh sandwich tightly in cling wrap and refrigerate for 8–10 hours or overnight.
This resting time helps the dessert firm up and allows the flavors to blend beautifully.
Step 4: Slice and Serve
Remove the chilled Sandesh from the refrigerator and unwrap it carefully.
Using a sharp knife, cut it into small squares or rectangles.
Garnish with pistachio slivers and serve chilled.
