
Ingredients:

1 cup soybeans (soaked overnight or at least 8 hours)

2 to 3 tablespoons lemon juice or white vinegar

Water (as needed)
Steps to Make Tofu:
Step 1: Make Soy Milk

Soak soybeans overnight until they swell.

Wash thoroughly and grind with some water to make a paste.

Mix this paste with about 3 cups of water and boil well until a milk-like liquid forms.

Strain the mixture through a muslin cloth or sieve to get fresh soy milk.
Step 2: Curdle the Soy Milk

Heat the soy milk on low flame. When it just starts to boil, slowly add lemon juice or vinegar.

Milk will curdle and separate into curds and watery whey within a few minutes.
Step 3: Press the Tofu

Pour the curdled mixture into a muslin cloth to drain the water.

Rinse the curds with cold water to remove sourness.

Tie the cloth tightly and place a heavy object on top (like a rolling pin or book) to press out excess water for 20-30 minutes.

Open the cloth and you will have fresh, soft homemade tofu ready to use!
