However, making traditional carrot halwa is time-consuming—from grating carrots to slowly cooking them in milk. Because of busy schedules, many people now prefer buying it from the market.
But what if you could make authentic, desi-style gajar ka halwa at home in less than half an hour? This instant recipe helps you save time without compromising on taste.
Carrots are rich in vitamin A and antioxidants, making carrot halwa not just tasty but nutritious as well. With a few smart shortcuts, you can enjoy this winter favorite anytime.
Ingredients required
500 grams carrots
2–3 tablespoons pure ghee
300 ml milk (about 1½ glasses)
Some full cream (optional)
½ teaspoon green cardamom powder
10–12 almonds
10–12 cashews
1 tablespoon raisins
Sugar as per taste
How to make instant gajar ka halwa
Prepare the carrots
Wash and peel the carrots. Instead of grating them, cut them into small pieces. You may remove the yellow core if you prefer.
Crush, don’t puree
Put the carrot pieces in a mixer grinder and pulse lightly. Make sure the carrots are crushed but not turned into a smooth paste.
Cook in ghee
Heat ghee in a pan and sauté the crushed carrots for 4–5 minutes. This step removes rawness and enhances flavour.
Add milk
Pour in one glass of milk, cover the pan, and cook for about 10 minutes. Stir occasionally and cook until the milk reduces and thickens.
Thicken milk separately
In another pan, simmer the remaining milk on low heat until it thickens. This step gives the halwa a rich taste.
Pressure cooker option
To save more time, you can cook carrots with milk in a pressure cooker for one whistle. If using this method, do not grind the carrots—cook them in pieces and later mash lightly with a spatula.
Add sugar and dry fruits
Once the milk evaporates, add sugar and stir continuously on medium heat. The mixture will release moisture again—cook until it dries. Add chopped almonds, cashews, raisins, cardamom powder, and the thickened milk.
Final touch
Mix everything well and cook for a few more minutes. Your instant gajar ka halwa with authentic flavour is ready to serve.
