During winter, green leafy vegetables like spinach, fenugreek (methi), and bathua become a staple in most kitchens. They are not only tasty but also packed with iron, fiber, vitamins A and C, and essential minerals. These nutrients help boost immunity, improve digestion, and support hemoglobin levels. That’s why many people buy these greens several times a week.
However, a common problem is that leafy vegetables start wilting within a day or two. Leaves turn yellow, become slimy, or rot due to excess moisture or poor ventilation. If you want to keep your greens fresh for longer, it’s important to store them correctly. Here’s the right way to do it.
Dry them thoroughly after washing
Many people wash greens and immediately put them in the fridge. This trapped moisture causes faster spoilage. Always wash leafy vegetables with clean water, then place them in a sieve so excess water drains out completely. You can also gently pat them dry with a cotton cloth or kitchen towel. Store them only when they are fully dry.
Avoid airtight containers
Storing greens in airtight containers increases humidity, which leads to faster decay. Instead, wrap them loosely in a paper towel or newspaper. You can also keep them in a plastic bag with a few small holes for airflow. Proper ventilation helps the leaves stay fresh.
Store in the vegetable box
Never keep spinach, fenugreek, or bathua near the freezer or on the top shelf of the refrigerator. Always place them in the vegetable tray or crisper box, where temperature and humidity are more balanced and suitable for leafy vegetables.
Remove thick stalks and roots
If the greens have thick stems or roots attached, remove them before storing. This reduces moisture loss and helps extend their shelf life, keeping the leaves fresh for longer.
Don’t chop before storing
Chopping greens in advance is a common mistake. Once cut, leafy vegetables oxidize quickly and spoil faster. Always store them whole and chop them only just before cooking.
