Healthy and Delicious: Kunal Kapoor Shares a Fiber-Rich Millet Khichdi Recipe for Weight Management

However, nutrition experts and chefs say that with the right ingredients and cooking methods, it is possible to prepare meals that are both flavorful and nutritious. Celebrity chef Kunal Kapoor recently shared one such recipe—a fiber-rich millet khichdi that is easy to prepare at home and suitable for people who want a healthy yet satisfying meal.


A Nutrient-Packed Millet Khichdi

The dish combines different types of millets and lentils, making it rich in fiber, plant protein, and essential nutrients. Such ingredients help improve digestion, provide long-lasting energy, and support weight management.

Chef Kapoor shared the recipe with his followers on social media on March 7, highlighting how traditional ingredients can be turned into a wholesome meal.


Ingredients

For the Millet and Lentil Base

  • ¼ cup foxtail millet (kangni)

  • ¼ cup pearl millet (bajra)

  • ¼ cup jowar (sorghum)

  • ¼ cup barnyard millet (sanwa)

  • ¼ cup moong dal (washed)

  • ¼ cup masoor dal

  • ½ cup toor dal (pigeon pea)

  • ½ tsp turmeric powder

  • 1 tsp salt

  • 7 cups water

For the Tempering

  • 3 tbsp ghee

  • 2 dry red chilies

  • ½ tsp asafoetida (hing)

  • 2 tsp mustard seeds

  • 2 tsp cumin seeds

  • Curry leaves (1 sprig)

  • ½ cup finely chopped onion

  • 2 tsp finely chopped ginger

  • 1 tbsp finely chopped garlic

  • 1 chopped green chili

  • ½ tsp turmeric powder

  • Red chili powder (to taste)

  • Salt (as required)

  • 1 cup chopped tomatoes

  • Kasuri methi powder

  • Fresh coriander leaves

  • Lemon juice


How to Prepare Millet Khichdi

Step 1:
Combine foxtail millet, pearl millet, jowar, and barnyard millet in a bowl. Wash them thoroughly and drain the water.

Step 2:
Add the grains to a pressure cooker along with moong dal, masoor dal, and toor dal. Pour in water, add turmeric and salt, then cook for 2–3 whistles.

Step 3:
Meanwhile, prepare the tempering. Heat ghee in a pan and add dried red chilies, asafoetida, mustard seeds, cumin seeds, and curry leaves.

Step 4:
Add chopped onions, ginger, and garlic and sauté until the onions turn light golden.

Step 5:
Mix in green chilies, turmeric powder, red chili powder, and chopped tomatoes. Cook the mixture well until the spices blend.

Step 6:
Once the pressure cooker cools, add the prepared masala to the cooked khichdi and mix thoroughly. Sprinkle kasuri methi, chopped coriander leaves, and a little lemon juice.

Serve the dish hot and fresh.
