It adds a sharp pungency to dishes and also offers several health benefits. However, like many other spices available in the market today, black pepper is increasingly being adulterated. This not only reduces its quality and taste but can also pose serious health risks.
If you regularly use black pepper at home, it is important to be aware of the ways in which it is adulterated and how you can identify pure black pepper before using it.
What is black pepper adulterated with?
The most common adulterant found in black pepper is dried papaya seeds, which closely resemble peppercorns in size and appearance. Apart from this, black pepper may also be mixed with hollow or lightweight seeds, stones, clay, artificial colors, or polishing agents. Consumption of such adulterated spices can be harmful to digestion and overall health.
How to identify adulterated black pepper at home
Water test
Put a few black peppercorns into a glass of water. Genuine black pepper sinks to the bottom, while adulterated pepper, especially papaya seeds, tends to float on the surface.
Fingernail pressure test
Press a peppercorn using your fingernail. If it feels soft or gets crushed easily, it may be adulterated. Pure black pepper is hard and does not break easily.
Smell and taste test
Authentic black pepper has a strong aroma and sharp, spicy taste. Adulterated pepper usually smells mild and lacks pungency.
Paper rub test
Rub a peppercorn on a clean white paper. If it leaves black stains on the paper, it indicates the presence of artificial coloring or polish. Pure black pepper does not leave any color marks.
Breaking the peppercorn
Try breaking a peppercorn. Genuine black pepper is solid and difficult to break, whereas papaya seeds break easily and appear lighter inside.
