This winter, try something different and nutritious by making a chocolate–sweet potato cake. Sweet potatoes are packed with nutrients and have a natural sweetness, while chocolate adds rich flavour along with an energy boost. Chocolate–Sweet Potato Cake recipe
Method to prepare the cake
Crack the eggs into a large mixing bowl. Add maple syrup and vanilla extract and whisk well.
Once mixed, add the sweet potato puree and whisk until the mixture becomes light and smooth.
Sift in the cacao powder and salt. Beat everything together until the batter turns fluffy and lump-free.
Pour the batter into the prepared cake pan and spread it evenly using a spatula.
Gently tap the pan on the counter to release any trapped air bubbles.
Bake the cake for about one hour. Once done, remove it from the oven and let it cool on a wire rack for around 30 minutes, then refrigerate briefly.
How to make the frosting
Melt the dark chocolate chips using a double boiler. Add the room-temperature cream and mix well until smooth and glossy.
Take the cake out of the refrigerator and spread the chocolate frosting evenly on top.
For garnish, sprinkle some grated chocolate over the cake.
