Eggless Choco Lava Cake Without Oven: Make This Gooey Dessert at Home With Chef Ranveer Brar’s Easy Recipe

Choco Lava Cake is loved for its rich taste and molten chocolate centre. Originally created by French chef Michel Bras, this dessert is called “lava” cake because warm, melted chocolate flows out like lava when you cut into it. While many people think it’s difficult to make at home, Ranveer Brar has shared a simple method to prepare Choco Lava Cake without eggs and even without an oven.
If you want to surprise your kids or loved ones with a restaurant-style dessert, this recipe is perfect and can be made using basic kitchen tools.
Ingredients for Eggless Choco Lava Cake
For the batter:

½ cup cold water

3 tablespoons oil
-
1 teaspoon lemon juice
-
⅓ cup powdered sugar
-
1 teaspoon vanilla essence
Dry ingredients:

A pinch of salt
-
2 tablespoons cocoa powder
-
½ cup all-purpose flour
-
½ teaspoon baking soda
For the lava centre:
-
100 grams dark chocolate (cut into small pieces)

1–2 teaspoons butter
For greasing:
-
Butter
-
2 tablespoons flour (for dusting the mould)
Step-by-Step Recipe
1. Prepare the liquid mixture
In a bowl, add cold water, oil, lemon juice, powdered sugar, and vanilla essence. Mix well until everything is combined. Keep this aside.
2. Prepare the dry mixture
In another bowl, mix salt, cocoa powder, flour, and baking soda thoroughly. Set aside.
3. Prepare the mould
Grease your mould with butter and place it in the freezer so the butter sets.
After a few minutes, take it out, dust it lightly with flour on all sides, and return it to the freezer again.
4. Make the batter
Slowly add the liquid mixture to the dry ingredients. Mix gently until smooth. Do not over-whip the batter.
5. Assemble the lava cake
Take the chilled mould out of the freezer.

Add 2–3 spoons of batter

Place a small piece of dark chocolate in the centre

Add 1–2 small spoons of butter

Cover again with 1–2 spoons of batter
Repeat for all moulds. Keep the filled moulds in the freezer for 1–2 minutes.
6. Steam the cake
Place the moulds in a pre-heated steamer and steam for 4–5 minutes only. Over-steaming will harden the centre.
7. Serve hot
Carefully remove the cake from the mould. Garnish with apple slices, cherries, or strawberries. Serve immediately so the chocolate lava flows out when you cut into it.
