If you enjoy baking cakes, you’ve probably tried chocolate, vanilla, or fruit cakes. But a lemon cake is something truly special. Its mild tang, refreshing citrus aroma, and soft, moist texture create a perfect balance of sweetness and sourness. Unlike heavy desserts, lemon cake feels light and fresh, which makes it a favorite for many people.
Although lemon cake is especially popular during summer because of its cooling and refreshing taste, it can be enjoyed in any season. Many people believe that achieving a bakery-like lemon cake at home is difficult, but with the right steps, it’s actually quite simple. Here’s an easy, step-by-step recipe you can try at home.
Ingredients for Lemon Cake

2 lemons (preferably organic or unwaxed)

3/4 cup sugar (about 150 grams)

4 eggs

1½ cups all-purpose flour (about 200 grams)

1/3 cup cornflour (about 50 grams)

1½ teaspoons baking powder (about 7 grams)

1/2 cup yogurt (about 125 grams)

Ingredients for Lemon Syrup

3 tablespoons lemon juice

Method to Make Lemon Cake
Step 1: Prepare the lemon sugar
Take a bowl and add the sugar. Grate the lemon peel directly into the sugar using the fine side of the grater. Make sure you only grate the yellow zest and avoid the white part. Rub the sugar and zest together with your fingers to release the lemon aroma.
Step 2: Whisk the eggs
Add the eggs to the lemon sugar mixture and whisk well until the mixture becomes light, pale, and fluffy. This step is important for achieving a soft and spongy cake texture.
Step 3: Add dry ingredients
Sift together the all-purpose flour, cornflour, baking powder, and salt. Gradually add this dry mixture to the egg mixture and gently mix until combined.
Step 4: Add wet ingredients
Now add the melted butter, yogurt, and vanilla essence. Mix everything into a smooth, lump-free batter.
Step 5: Prepare the cake tin
Line a cake mould with parchment paper and lightly grease it. Pour the batter into the mould and gently tap it on the counter two to three times to remove air bubbles.
Step 6: Bake the cake
Bake the cake in a preheated oven at around 170–180°C for about 45–50 minutes, or until the top turns golden brown. Insert a toothpick into the center; if it comes out clean, the cake is ready.
Step 7: Prepare the lemon syrup
While the cake is baking, prepare the syrup. Heat water and sugar in a pan until the sugar dissolves completely. Turn off the heat and add lemon juice.
Step 8: Finish the cake
Once the cake is out of the oven, pour the warm lemon syrup evenly over it. Let the cake absorb the syrup. If you like, dust icing sugar on top for a bakery-style finish.
