  • Coriander powder – 2 tsp

  • Asafoetida (hing) – 1 tsp

  • Kasuri methi – 2 tsp

  • Fresh coriander – for garnish

How to make methi dana sabzi

  1. Soak and boil the methi dana
    Wash the fenugreek seeds and soak them overnight. In the morning, boil them in fresh water until they come to a boil once or twice. Drain the water—this step helps reduce bitterness.

  2. Prepare the spice base
    Coarsely crush coriander seeds, cumin seeds, and a few garlic cloves using a mortar and pestle. This gives the sabzi its authentic aroma.

  3. Cook the masala
    Heat mustard oil in a heavy-bottomed pan until it lightly smokes. Add chopped onions and green chillies. Sauté until the onions turn soft and translucent.

  4. Add crushed spices and garlic
    Add the coarsely ground spice mix and remaining whole garlic cloves. Cook until the onions turn light golden and fragrant.

  5. Add curd mixture
    In a bowl, whisk curd with turmeric, red chilli powder, coriander powder, and asafoetida. Add this to the pan and cook until oil starts separating from the masala.

  6. Add methi dana and finish cooking
    Add boiled fenugreek seeds, salt, and raisins. Mix well and cook for a few minutes on low flame. Finish with kasuri methi and fresh coriander.
