How to Make Protein-Rich Brownies
Step 1: Prepare the dry mix
In a bowl, mix almond flour and coconut flour thoroughly. Add monk fruit powder to this mixture and keep it aside.
Step 2: Melt the chocolate
Take another bowl, add chocolate chips and coconut oil. Heat this mixture using a double boiler on low heat until it melts completely and becomes smooth.
Step 3: Prepare the wet mixture
In a separate bowl, crack two eggs and add one scoop of Greek yogurt. Whisk well until smooth.
Step 4: Combine ingredients
Slowly add the melted chocolate mixture to the egg and yogurt mix and whisk again. Now add the prepared dry flour mix and combine well.
Step 5: Add protein powder
Add protein powder to the batter and mix until everything is well combined. This step boosts the protein content of the brownies.
Step 6: Prepare the baking mould
Line a baking mould with parchment paper and lightly grease it with butter. Pour the brownie batter into the mould and gently tap it on a flat surface to release trapped air.
Step 7: Garnish and bake
Chop walnuts into small pieces and sprinkle them evenly on top of the batter. Bake in a preheated oven at 170°C for about 20 minutes. Check for doneness and bake for a few more minutes if needed.
