Sawan potato-tomato curry recipe: In the month of Sawan, many devotees of Shiva observe fast and eat food without garlic and onion. Such food is considered satvik which purifies the body and mind. Therefore, today we have brought for you the recipe of Bhandara style potato-tomato vegetable without garlic and onion. This vegetable is especially eaten during fasting. So let us know the easy recipe of making delicious Bhandara style potato-tomato vegetable without garlic and onion.
Ingredients required
- Oil – 2 to 3 tbsp
- Boiled potatoes – 3 to 4
- Tomato puree – of 2 medium tomatoes
- Cumin seeds – 1 tsp
- Green chillies – 2 to 3
- Asafoetida – 1 pinch
- Red chilli powder – 1 tsp
- Turmeric powder – 1 tsp
- Salt – as per taste
- Green coriander - for garnishing
- Water – 2 cups (for gravy)
Method to prepare
- First of all, heat a wok or pan and add 2 to 3 tablespoons of oil in it. When the oil is heated well, add cumin seeds, green chillies and a pinch of asafoetida in it. Let them crackle for a few seconds.
- Now add tomato puree to it and mix it well.
- After this add red chili powder, turmeric powder and salt as per taste. Then mix all the spices well.
- Now cover the pan and let the masala cook until the oil starts separating. Keep stirring in between so that the masala does not burn.
- After about 2-3 minutes, when the oil starts separating from the spices, add boiled potatoes to it and mix well.
- Now add 2 cups of water to it and decide the thickness of the gravy as per your requirement. Then mash some potatoes lightly so that the gravy becomes a little thick.
- Now cover the pan and cook for 2 to 3 minutes more. The vegetable will be ready.
- Garnish with green coriander and serve with hot puri or paratha.
