Eggs are one of the easiest ways to add protein to your breakfast, but eating boiled eggs every day can quickly become boring. The good news is that you don't need to give up eggs—you can simply change the way you prepare them.
From a colourful vegetable omelette to creamy scrambled eggs and nutritious avocado toast, here are five easy egg recipes you can try for a more interesting breakfast.
1. Vegetable Omelette
A classic omelette becomes much more nutritious and flavourful when you add vegetables to it. You can mix in finely chopped onions, tomatoes, spinach, bell peppers, peas or other vegetables of your choice.
Simply whisk the eggs, add your vegetables and cook the mixture in a pan with a small amount of oil. It's quick to make and can keep you feeling full through the morning.
2. Egg Bhurji
Egg bhurji is another simple option that's particularly convenient if you find flipping an omelette difficult. Instead of keeping the egg mixture in one piece, you continuously stir and scramble it while cooking.
You can add onions, tomatoes, green chillies, coriander and your favourite spices to give it an Indian-style flavour. It also has a softer texture than a typical omelette and pairs well with whole-wheat roti or toast.
3. Sunny-Side-Up Eggs
If you enjoy a creamy egg yolk, sunny-side-up eggs are an easy choice. The egg is cooked primarily on one side, leaving the yolk soft and runny while the whites become firm.
Using a good non-stick pan can help you cook the egg with less oil or butter. Pair it with whole-grain toast and some fresh vegetables for a simple breakfast.
4. Soft Scrambled Eggs
Scrambled eggs can be incredibly soft and creamy when cooked correctly. Whisk the eggs thoroughly before adding them to a pan, and you can add a small amount of milk for a softer texture.
Cook them over low to medium heat and gently stir as they set. Avoid overcooking, as this can make the eggs dry and rubbery. Serve them with whole-grain toast or vegetables for a satisfying breakfast.
5. Avocado Egg Toast
For something a little different, try combining eggs with avocado toast. Start with whole-wheat or multigrain bread and toast it until crisp.
Mash some ripe avocado and spread it over the toast. Top it with a poached egg and season with a little salt, pepper or chilli flakes. The combination provides protein from the egg along with healthy fats and fibre from the avocado and whole-grain bread.
Make Your Breakfast More Interesting
Eggs don't have to mean the same boiled breakfast every morning. By changing the cooking method and combining them with vegetables, whole grains or avocado, you can create several nutritious and tasty breakfast options.
For a balanced meal, try pairing your eggs with vegetables, whole grains and a source of healthy fats rather than relying on eggs alone.
