A Nutritious Marwari Winter Dessert That Keeps the Body Warm: The Traditional Phalodi Recipe

Rajasthan’s cuisine is famous across India, and even foreign tourists often fall in love with its unique flavors. While dishes like dal-baati and churma are widely known, several traditional recipes are still enjoyed mostly within local households. One such winter-special sweet from Marwari homes is phalodi — a nutrient-rich dessert made using dried fruits, edible gum, and dry ginger.

Phalodi has a slightly crunchy texture with a mild spicy kick. It not only keeps the body warm during winter but also provides essential nutrients. Also known as Magadh, this dish holds a special place in Marwari culture. It is often prepared during festivals and weddings and is commonly given as a gift to guests. Its moderate sweetness and coarse, hearty texture make it a winter favorite.

Ingredients you will need
• 3/4 cup wheat flour
• Slightly more than 1/2 cup pure ghee
• 1/4 cup edible gum (gond)
• 1/2 cup almonds (20–25 pieces)
• 2 teaspoons coarsely ground black pepper
• 2 teaspoons dry ginger powder
• 5–6 tablespoons powdered sugar (or adjust to taste)
• Pistachios, raisins, and other dried fruits for garnish

Step-by-step recipe for phalodi

  1. Heat about half a cup of ghee in a heavy-bottomed pan. Add the wheat flour and roast it on low heat for 15–17 minutes until it becomes golden and aromatic. Stir continuously to avoid burning.

  2. In another pan, heat the remaining ghee and fry the edible gum. Once the gum puffs up, remove it with a slotted spoon and let it cool. Crush it lightly after cooling.

  3. Add the crushed gum to the roasted flour and cook the mixture for a few more minutes. (You can also add the gum directly to the flour and ghee mixture, but you’ll need to crush it afterward.)

  4. Chop the almonds into small pieces and add them to the mixture. Turn off the flame. Chop the remaining dried fruits and nuts separately for garnishing.
