Ingredients required to make Achari Aloo Masala

  • Boiled potatoes – 4 to 5 medium sized
  • Onion – 1 finely chopped
  • Tomato – 1 finely chopped
  • Green chillies – 2 chopped
  • Ginger-garlic paste – 1 teaspoon
  • Turmeric – half a teaspoon
  • Red chilli powder – 1 teaspoon
  • Coriander powder – 1 teaspoon
  • Cumin seeds – half a teaspoon
  • Fenugreek seeds – 1/4 teaspoon
  • Fennel – half a teaspoon
  • Kalonji – one-fourth teaspoon
  • Mustard seeds – half a teaspoon
  • Mango pickle masala – 1 to 2 teaspoons
  • Salt – as per taste
  • Oil – 2 tbsp
  • Coriander leaves – for garnish

Easy recipe to make Achari Aloo Masala

  • To make the pickled potato masala, first heat oil in a pan. When the oil is slightly hot, add cumin seeds, mustard seeds, fenugreek seeds, fennel seeds, and nigella seeds. Once the spices begin to crackle, you'll know your tempering is perfect.
  • Add the chopped onion and fry until golden brown. Add the ginger-garlic paste and cook for 1 minute. Then, add the tomatoes and green chilies and cook until the tomatoes are tender.
  • Now add turmeric, red chili, coriander powder, and salt and fry the spices thoroughly. When the spices start releasing oil, it is fully cooked.
  • After this, lightly break the boiled potatoes with your hands and add them to the spices, mixing well so that the spices coat each potato. Then, add the mango pickle spices. This gives the pickled potatoes their original flavor. Some people even add a little mango pickle, if desired, which enhances the taste.
  • After this, cook the vegetable covered on low flame for 5 to 7 minutes so that the full taste of the spices gets absorbed well into the potatoes.
  • Turn off the heat and garnish with coriander leaves. You can serve this hot with roti, paratha, puri, or pack it in your lunch box.
