Ingredients:

  • 2 cups sliced mushrooms (any variety like cremini, white button, shiitake, or porcini)

  • 1 cup chopped onion

  • 2 teaspoons finely chopped garlic

  • 2 teaspoons butter

  • ½ teaspoon dried herbs mix

  • 1 cup vegetable stock or boiled vegetable water

  • 2 teaspoons fresh cream

  • Salt to taste

  • Black pepper powder

Method:

  1. Melt butter in a heavy-bottomed pan, add garlic and fry gently until soft.

  2. Add onions and fry on medium heat for 2 minutes, avoiding burning.

  3. Add mushrooms and sauté for 4 minutes, stirring occasionally.

  4. Mix in dried herbs, black pepper powder, and vegetable stock; boil for 4-5 minutes.

  5. Allow the mixture to cool, then blend into a smooth paste.

  6. Return the paste to the pan, add fresh cream and water or vegetable stock, and cook on medium heat for 3 minutes.

  7. Add salt at the end for taste.

  8. Serve hot with toasted multigrain bread for a delightful winter meal.
