• 1½ teaspoons ajwain (celery seeds)
• 1 teaspoon cumin seeds
• 1 teaspoon fennel seeds
• 1 teaspoon black pepper
• 1½ teaspoons black salt
• ½ teaspoon regular salt
• 3 teaspoons dry mango powder
• 1 teaspoon jaggery powder (or a small piece of jaggery)
• 3 tablespoons water
• 1 teaspoon oil
• 2 pinches cornflour
• Powdered sugar for coating (optional)

How to make Hajmola

  1. Combine all the whole spices — ajwain, cumin, fennel, and black pepper.

  2. Dry roast them in a pan until they release aroma. Let them cool for 5 minutes.

  3. Transfer the spices to a grinder, add about 4 tablespoons of water, and grind.

  4. Once you get a fine paste, add black salt, regular salt, jaggery, and dry mango powder. Grind again.
