The hot sweet potato chaat available in the market doesn't offer the same enjoyment as the aromatic taste of flat sweet potatoes roasted on a brazier. In fact, YouTuber Sangeeta Ruhela has shared a simple trick to enjoy hot roasted sweet potatoes in winter. Her method will give you a 'brazier-like' taste. Here, you will have to roast the sweet potatoes on an iron pan, without salt, ghee, or oil.
Cleanse sweet potatoes

First, it's important to wash the sweet potatoes thoroughly to remove all dirt. Since the potatoes are being roasted directly on the pan, they need to be thoroughly cleaned. Immediately after washing, wipe the potatoes with a clean, dry cloth. This will ensure that when the potatoes are placed on the hot pan, they begin to roast rather than steaming. Any moisture on the surface can slow down the roasting process.
Iron pan and low flame

For this trick, you only need to use an iron pan or wok. Avoid aluminum. An iron pan retains heat evenly and for a long time, even on low heat. High heat can burn the outside of the sweet potato; roasting it on low heat gives it a natural and fragrant flavor, similar to roasting it on a brazier.
Laying pattern and sealing

The method of placing and covering the sweet potatoes on the pan is essential for roasting. The sweet potatoes must be placed on the pan in a layered pattern, not one on top of the other. Each piece should have direct contact with both the pan's surface and the hot steam. After placing the sweet potatoes, place a 6- to 7-inch deep pot, such as a saucepan, upside down and cover the pan completely to prevent any steam from escaping.
Roasting in a short time

Because the steam is completely sealed in, the sweet potatoes are roasted in just 15 minutes. This is significantly less time than traditional roasting in a fire or oven. Check the sweet potatoes after the set time. If they seem a little undercooked, turn them over and cover them again for another 5 minutes. If no steam escapes at all, the roasting time can be reduced even further.
