Which drink is this?
This milk-and-gram-flour drink is called Gram Flour Soorka. It’s a syrup-style hot drink with the warmth of black pepper, a hint of sweetness, and the crunch of nuts. It is made mostly in Punjab and several parts of North India, especially for relief from cold and cough.

Ingredients
• 1 teaspoon ghee
• 2 teaspoons gram flour
• 2 cups milk
• 1/2 teaspoon turmeric
• 1/2 teaspoon dry ginger powder
• 1/2 teaspoon black pepper powder
• 1.5 tablespoons jaggery powder
• Chopped nuts (almonds, pistachios, walnuts, cashews)
• Saffron (optional)

How to make Gram Flour Soorka

  1. Heat a thick-bottomed pan on low flame.

  2. Add ghee and then add the gram flour. Roast gently until it becomes fragrant and slightly changes colour.

  3. Add the black pepper powder, turmeric, and dry ginger powder. Mix well.

  4. Pour in the milk and cook until the mixture boils 2–3 times.

  5. Add chopped almonds, pistachios, walnuts, and cashews. Turn off the heat.

Finishing touch

  1. In another small pan, melt jaggery with two tablespoons of water to make a light syrup.

  2. Add this jaggery syrup to the hot milk mixture. Adjust sweetness as you like.

  3. Serve hot. Garnish with pistachios if you prefer.
