Why eat adulterated jaggery when you can make pure jaggery at home?

Winter is the season for warm, nourishing foods—and jaggery is one of the most recommended. Rich in iron, minerals, and natural sugars, jaggery is healthier than refined sugar and is widely used after meals. But with increasing adulteration in the market, many people prefer homemade jaggery. The good news is that you can easily prepare pure jaggery at home using a simple, natural method.

Nutritional value of jaggery
Jaggery contains:
• Natural sugars (fructose, glucose)
• Iron
• Magnesium
• Potassium
• Protein (small amount)
• Very low fat
• Essential minerals and vitamins

Because of these nutrients, jaggery helps in digestion, boosts energy, keeps the body warm, and supports hemoglobin levels.

How to make jaggery at home
Ingredients
• 2–3 liters of fresh sugarcane juice (adjust quantity as needed)

Step-by-step method

  1. Extract sugarcane juice and filter it through a fine cloth to remove dust, straw, or impurities.

  2. Pour the cleaned juice into a large, heavy-bottomed pan.

  3. Heat on low flame and bring it to a slow boil.

  4. As the juice boils, foam will form on top. Continuously remove this foam with a spoon.

  5. Keep stirring so the mixture doesn’t stick or burn.

  6. After around 1 hour, the juice will thicken into a syrup-like consistency.

  7. To check readiness, drop a little syrup into a bowl of cold water:
    • If it spreads, cook a little longer.
    • If it solidifies and feels firm, the jaggery is ready.

  8. Switch off the heat.

  9. Grease a plate with ghee and pour the thick mixture into it.

  10. Let it cool completely—it will solidify into jaggery.

  11. Cut it into pieces and store in an airtight container.
