Ingredients for Corn Bhajiya:

1 kg fresh and soft corn kernels

1 teaspoon salt

1 teaspoon red chili powder

½ teaspoon turmeric powder

¼ teaspoon asafoetida

1 teaspoon crushed celery 1

teaspoon crushed fennel

1 finely chopped onion

1 capsicum finely chopped

1 inch finely chopped ginger

1 finely chopped green chilli

2 tbsp cornflour

1 cup gram flour

Water

Cooking oil for deep frying

Instruction:

To make corn bhajia, first, take out the kernels from a cob of corn and keep it aside. Then, finely grate or chop all the remaining corn kernels.

In a mixing bowl, combine the grated corn with the corn kernels.

Add salt, turmeric powder, red chili powder, asafoetida, crushed celery, and crushed fennel to the corn mixture. Mix well.

Now, add finely chopped onion, capsicum, ginger, and green chilies to the mixture. Mix everything well.

Next, add corn flour and gram flour to the mixture. Gradually add water and mix until you get a thick batter.

Keep the batter covered for about 10 minutes. Later add some more water and blend for 2-3 minutes until smooth.

Heat oil in a pan for frying.

Using a spoon or your hands, carefully drop portions of the batter into the hot oil. Fry the bhajiya on medium flame until it becomes golden brown and crisp.

When the bhajiyas are cooked, take them out from the oil and place them on absorbent paper to remove excess oil.

Your crispy and delicious corn bhajiya is ready to serve. Enjoy them hot with green chutney.
