Shrikhand is a popular Indian dessert made with strained yoghurt, and sugar, and flavoured with saffron and cardamom. Here's a recipe to make shrikhand:

Ingredients:

  • 2 cups plain Greek yoghurt
  • 1/2 cup powdered sugar
  • 1/4 tsp saffron strands
  • 1/4 tsp cardamom powder
  • 2 tbsp warm milk
  • Chopped nuts for garnish (optional)

Instructions:

  1. Take a cheesecloth or a muslin cloth and place it over a strainer. Put the Greek yoghurt on the cloth and cover it with another cloth. Keep the strainer over a bowl and refrigerate for at least 4 hours, or overnight. This will help to drain the excess water from the yoghurt.

  2. In a small bowl, add saffron strands and warm milk. Let it soak for 5 minutes.

  3. Take the thick yogurt out of the refrigerator and transfer it to a mixing bowl.

  4. Add the powdered sugar, soaked saffron, and cardamom powder to the yogurt. Mix well until everything is well combined.

  5. Once mixed, transfer the shrikhand to a serving bowl and garnish with chopped nuts (optional).

  6. Refrigerate for an hour before serving.

Your shrikhand is ready to be served!
