Pani puri is a popular street food in India that consists of small, crispy hollow balls filled with spiced potatoes and tangy, spicy water. Here's how you can make spicy and wonderful pani puri at home:

Ingredients: For the Puri:

  • 1 cup Semolina (Sooji)
  • 1/4 cup all-purpose flour (Maida)
  • Salt to taste
  • Water for kneading
  • Oil for frying

For the Filling:

  • 3-4 boiled potatoes, mashed
  • 1 tsp roasted cumin powder
  • 1 tsp chaat masala
  • 1/2 tsp red chilli powder
  • Salt to taste
  • Chopped coriander leaves
  • Tamarind chutney

For the Pani:

  • 1 cup fresh mint leaves
  • 1/2 cup fresh coriander leaves
  • 2-3 green chillies
  • 1 tsp roasted cumin powder
  • 1 tsp chaat masala
  • 1/2 tsp black salt
  • Salt to taste
  • 2 tbsp lemon juice
  • 2 cups water

Instructions:

  1. To make the Puri, mix together semolina, all-purpose flour, salt, and enough water to form a stiff dough.

  2. Knead the dough well for about 10-15 minutes until smooth.

  3. Cover the dough and let it rest for 10-15 minutes.

  4. Divide the dough into small equal-sized balls.

  5. Roll out each ball into thin circles.

  6. Cut out small circles using a cookie cutter or a lid of a small jar.

  7. Heat oil in a deep frying pan over medium-high heat.

  8. Once the oil is hot, fry the puris until they puff up and turn golden brown in colour.

  9. Drain the puris on a paper towel to remove excess oil.

  10. To make the filling, mix together mashed potatoes, roasted cumin powder, chaat masala, red chili powder, salt, and coriander leaves.

  11. Add a small amount of the filling into each puri.

  12. Top with some tamarind chutney.

  13. To make the pani, grind together mint leaves, coriander leaves, green chillies, roasted cumin powder, chaat masala, black salt, and salt in a blender.

  14. Add lemon juice and water to the mixture and blend again.

  15. Strain the mixture and adjust the seasoning as per taste.

  16. Serve the pani in a small glass and the stuffed puris on a plate.

  17. To eat, make a small hole in the centre of the puri and fill it with the pani.
